Banana Bread

I like bananas, and everything includes them. I tried this recipe for three times and every time I just wanted to get a sweeter taste, and this is the winner! It’s quick, easy and perfect with a cup of tea – especially with earl grey for me.

Banana bread recipe works best with too ripe bananas. First of all, make sure that you have two riped ones which are very soft and have black spots – riper they are, it’s better.


Ingredients (Serves 8-12)

3 cup oats
2 overripe bananas
2 eggs
2 tbsp coconut oil
1 tsp vanilla
1/4 cup carob molasses
1 tsp baking soda
cacao nibs as topping


  • Preheat the oven to 180 C
  • Add the oats to a food processor and blend until mostly fine. That’s your oat flour!
  • Mix all the ingredients
  • Bake in the oven for 30-35 mins
  • Leave to cool for 30 mins
